Another great dinner, and a butternut squashapie! (like recipe? get it?)

 I had an INTENSE workout with my trainer who just never ceases to amaze me. I told him one of these days I will bring my camera and he will video me doing his crazy workouts. It was great, and my legs are in pain :)

I came home and made this sweet looking thang

  • 2 eggwhites mixed in the bullet with 1/2 scoop chocolate peanut butter protein powder
  • 1/2 banana slices added once the batter is in the skillet
  • lots of H20 for me to drink!!
Dinner came a couple hours later and I decided to make delish Cinnamony butternut squash mash, which I have made before and it was a hit!



Cinnamony Butternut Squash Mash
  • Half the package of butter nut squash and cooked it in a water until the water came to a roaring boil. (about 10 minutes)
  • drain the water out of the pot
  • add cinnamon and vanilla extract
  • mash with a fork or masher
  • eat!
served with eggplant fries and zucchini chips AND tofu fries 

first, you MUST see the size of this purple beauty...I placed it next to my 32 oz aquafina to show that is is really humongo...this whole thing will not be made this evening!

sliced the eggplant in 'fry' like shape and cut the zucchini in chip like shape
sliced the tofu in 'fry' like shape
placed on baking sheet
sprinkle of kosher salt & peppa
drizzle of low sodium soy
garlic and garlic powder
steak and chop seasoning from TJ's

Bake at 350 for 30 minutes (flipped after 15)

Served with a homemade lil salad w/ sprouts, pepper, cuke (persian, my fav!) tomatoes and raw cauliflower which I also have a love affair with. Homemade mango chutney dressing of course!

FYI, this is how I keep the tofu in the fridge when I dont make the whole package. Tofu has alot of water in it, so I keep it in a tuppeware container sitting on a few paper towels to let all the water soak up before the next time I use it! great idea huh?

My and my bf went on a trip Sunday on a mission for apples!! we did (not enough) research and picked Honeypot Orchards in Stow, MA...We decided to take the motorcycle because uhhh it was amazing weather, not a cloud in the sky and September happens to be one of the BEST riding months! Oh you just wait till I whip out my leather chaps and leather fringe jacket (ok that was a joke! but would be funny if i were to wear that!) an Ode to the BF...he has a 2009 Street Glide...it.is.awesome

needless to say we didn't do our research too well....we finally got there after getting lost for about 40 minutes and this place was PACKED with more kids than an elementary school! we both stood for a bit in shell shock at the amount of people. He said to me at one point "well we would fit in if we were older and had 7 kids :) haha there were hayrides, cider donut lines out the wazoo and a petting zoo, which we couldnt even approach because of the crowd!

Some of the homemade Jam and honey in the Honeypot Store! I wanted to get some, but I didn't have enough cash on me and also we were limited to what we could bring b/c we were riding the motorcycle

Our tummies were also grumbling for lunch at this point so we made an executive decision to go into the farm store and buy a bag of fresh picked gala's...took the work out of the 'picking' and we will surely go again soon, just sure to do some research before 

Our lunch at "Our place" Helens in Concord MA...This is one of our fav motorcycle riding restaurants. Its in Concord center which is a quaint little town. 



I got a greek salad with a skewer of grilled chicken and but opted the feta for goat cheese and got balsamic dressing, not the greek. Ok I guess I made it a "Fit Foodie" special!

I will take this time to share a  FIT FOODIE'S HEALTHY EGG SALAD recipe because I do love egg salad but it can be coated in mayo and yolk, you can barely even taste the egg!!

ingredients 
serves 2
  • 4 hardboiled eggs, 2 whole, 2 just the whites
  • 1/2 c chopped celery
  • handful of diced up no sugar added pickles (find them near the normal pickes)
  • 1 heaping tbsp dijon mustard
  • 1 heaping tbsp greek yogurt such as fage or chobani
  • few shakes of salt and few cracks of fresh ground pepper
directions
  • in mixing bowl combine the mustard, yogurt, diced celery, diced pickles
  • chop the eggs (make sure to throw away those 2 yolks!) into very small pieces
  • throw them into the mustard, yogurt mixture
  • combine well
  • add salt and peppa'
  • I like to eat it on a josephs lavash wrap or a piece of ezekiel bread toasted with romaine, sprouts and tomato!



Helens is known for they're berry tart yogurt, for all you yogurt-aholics (like ME!) this is similar to pinkberry...we got half tart, half cherry, the flava of the day!

wowza...Lets recap this food filled weekend shall we?? I still think I am in a bit of food coma given we have massive amounts of leftovers from this weekends festivites...hey, I am not complaining over here, I'll tell ya that! :)  and you ask why I love holidays?? 

question to ponder: What is YOUR favorite holiday food and why??

So saturday night started off with lots of delish app's including a greek platter (pictured below) and a lovely cheese platter, which was acutally brought a bit late so I couldnt snap a pic of it : (

delish greek platter appetizer. Hummos, taboule, pita, feta with EVOO drizzled on top, olives ( I guess everyone loved those guys!!) and tzaziki sauce! YUMMM-O

ahhh my fav, a glass of pinot which was cool and refreshing and hit the spot

the delicious spread of food! lets see
  • garlic green beans w/ tomatoes
  • chicken marbella
  • 2 different briskets, one with mushrooms and craisins and the other with carrots and a savory marinade
  • roasted potatoes
  • 2 different salads, one with pomegranate and granny smith apples, one with goat cheese, walnuts, balsamic vinaigrette
  • ratatouille (NEED to find who brought this it was amazing!!)
  • Noodle kugel with cornflake crumb topping
  • roasted garlic and EVOO asparagus

Close up of the green beans and tomatoes, this was delicious, served cold and perfect amount of garlic. They were green and crisp and not at all soggy! this was a keeper for sure

one of the salads with goat cheese, walnuts, dried cranberries, croutons in the most amazing balsamic dressing!

Asparagus and roasted potatoes. You can see that the potatoes are bursting with spices and flavor and the asparagus was perfectly roasted with not too much salt! they were fabulous :)

ratatouille and amazing brisket with dried cranberries and mushrooms. The brisket was so tender and soft, it fell right apart when you touched it with your fork. AMAZING!

Annndddd...My plate...aka a mish mosh of just about everything on the table...what can I say, I felt bad leaving some of the dishes out! I had to be fair to all and give everything a taste!! My favorite dishes included  the green beans, brisket and chicken marbella...The salad with pomegranate and apples was amazing too!

Ok now that I am stuffed at this point...thats when they decide to bring out the desserts...I was ok with that though :) 

Here is an overview of only about half of the desserts out on the island in my kitchen
  • chocolate chip PB cookies, Brownies (made by yours truly)

  • this makes for a lovely, sweat sesh at the gym : )

HUGE fruit salad which was very pretty I felt bad taking it apart! but oh well i enjoyed it fully, especially the fresh mango and kiwi slices!

My grandmothers recipe for her famous apple cake! it is amazing and not too sweet at all, it would be a great breakfast bread! I will post the recipe

Last pic of the night is me and my Home gals, these are my best friends from High School, and yes of COURSE they wouldn't miss this night for the world...I was so happy : ) Oh thats me in the bottom right corner 

WHAT A NIGHT!!!! it was so food filled and everyone really did their part to bring a memorable dish!
