Protein Bread, Spinning and Goodies!

One more day till FRIDAY. Thats my favorite day of the week. Well, not really but it means the weekend is here! I want to back up to yesterday because I made Aprils Protein bars and wowza that was amazing. I have gone through half of it already! it tastes similar to my Pumpkin Protein mini loaf too!

It was SO good!!! Half of the 8X8 is gone. I used BSN Lean dessert Cinnamon Roll Protein. I love this flavor and brand for baking because it makes the goods nice and fluffy!

This morning started out with a repeat picture because yes it was a repeat breakfast!! I LOVED this combo yesterday. Gina mentioned that DCD is addicting but very sweet which is good because she can’t eat THAT much of it at once. I have began to realize that it is super sweet so just that much does the trick to satisfy that DCD craving!

Also from yesterday, remember when I talked about my major Tea fail, when I added soy milk and curdling all of the sudden occured? well Mo (http://www.iarethefoodsnob.com/) explained to me:

Naomi, when i used to work at the ‘bux and customers ordered the orange or passion tea, i would warn them about adding milk. the tea you have there has hibiscus and passion flowers… im pretty sure those are the curdling culprits. Too bad too. Because i know how good that tea is.

Lunch was a side salad with 1 eggwhite, red onion, romaine, ‘shrooms, green beans, red pepper, olive oil and vinegar for dressing

Whole wheat pita with left over grilled chicken and tofu, baby spinach, hummus, tomato, sprouts!

Yummers!

1/4 C oats cooked in water with frozen berrries added at the end.

today at work I taught spin! we usually have an instructor for our Thursday night class but she needed a sub today and i was MORE than happy to take over, you all know how much I love teaching!

Dinner was left over Greens and Beans soup made by Mama Fit Foodie. This is packed with beans, kale and potatoes! SO good!

Josephs wrap with baby spinach, chicken sausage (aged provolone flavor!) tomatoes, LC wedge, hummus and speghetti squash-LOVE this addition in the wraps!

I came home to the most intoxicating smell. My roomate had made banana bread! She got the recipe from Cooking Light

Ingredients

  • 2  cups  all-purpose flour
  • 3/4  teaspoon  baking soda
  • 1/2  teaspoon  salt
  • 1  cup  sugar
  • 1/4  cup  butter, softened
  • 2  large eggs
  • 1 1/2  cups  mashed ripe banana (about 3 bananas)
  • 1/3  cup  plain low-fat yogurt
  • 1  teaspoon  vanilla extract
  • Cooking spray

Preparation

Preheat oven to 350°.
Lightly spoon flour into dry measuring cups; level with a knife. Combine the flour, baking soda, and salt, stirring with a whisk.
Place sugar and butter in a large bowl, and beat with a mixer at medium speed until well blended (about 1 minute). Add the eggs, 1 at a time, beating well after each addition. Add banana, yogurt, and vanilla; beat until blended. Add flour mixture; beat at low speed just until moist. Spoon batter into an 8 1/2 x 4 1/2-inch loaf pan coated with cooking spray. Bake at 350° for 1 hour or until a wooden pick inserted in center comes out clean. Cool 10 minutes in pan on a wire rack; remove from pan. Cool completely on wire rack.

IT was SOOOO good!!!
  • Do you prefer muffins or breads? I prefer breads! they usually come out more moist, (I love the middles!)
  • 3 foods to eat for the rest of your life? Mine would be Cereal, Peanut butter and Cheese (all kinds!) I just asked my roommate and hers made me laugh…They were Lobster, turkey subs, hummus. I don’t know why I thought turkey sub was a funny answer!!
  • Plans for the weekend? RELAXING for me!!
