Lots of Leftover and New Spin Playlist!

Wow, its been a long time since I have posted. So sorry for going MIA. I had a busy weekend and then went right into the week, and haven’t had much breathing time! How was everyones weekend? Mine was great, relaxing but it was still “go-go-go” does this ever happen to anyone? This week is going to be much of the same, hence the sporadic posting, but I will try to do something everyday. AND this week is special because its my birthday on Wednesday!! I turn the big 2-4.

 I had a KILLER spin class Saturday morning!! The intensity was there from me and the class and it was awesome!! I also had a great playlist.

Friday night Jason and I went to a great restaurant downtown boston in the Fenway area called Burton Grill.
Mmmm <3 Carbs. A whole wheat roll and 1 white one.

We split the Mediterranean salad which was awesome! it had HUGE chunks of cucumber, tomatoes, onion, peppers and feta cheese. I had about 2 olives, but it was olive overload on this plate!! This salad was amazing, it made me realize a great salad doesn’t have to contain a whole lot of lettuce.

I got the cajun grilled salmon with Brocolli and Sweet potato. After I snapped this shot, the server realized he doused the Sweet potato in a brown sugar butter which I asked to not have. He took it back and gave me a naked one. This was amazing! I took half of the sweet potato and salmon home. (you will see it re-appear in leftovers!)

FRO YO!! The restaurant was conveniently located next to Berry Line, a tart yogurt chain in Boston. I got the half original/half cherry with blueberry and graham cracker. I have a new addiction. If any of you want to get me a birthday present….I love fro-yo (just sayin’)

Saturday morning started off with a new flavor!! I liked it a lot, but not as much as the S’mores. Hands down, AF makes great flavored, cheap coffee!
 

Fuel for Spin Class! 1/3 C oatbran cooked in water. I diced up 1/4 of an apple, frozen berries added at the end, chia seeds and a scoop of PB

LUNCH was LEFTOVERS! I made a huge jass salad with 1/2 of the salmon from Fridays dinner, diced up the sweet potato and put it all over mixed greens, cuke, broccoli, red pepper and tomatoes. I used balsamic vinegar for the dressing. This was uhhhmaazing

Jason and I did some errands, I got my birthday present from him a bit early! (will show later in the week) and then we met up with one of Jasons best friends and his girfriend (my friends too!) for dinner at Houstons, in Fanuiel Hall, Boston.

We started with the grilled chicken chopped salad. This came with avocado, tomato, carrot, egg, romaine and red pepper. IT WAS SO GOOD!

I got the herb crusted rotisserie chicken. I asked for all white meat.  (you will see leftovers, again!)

Side of spinach topped with shaved parmesan reggiano. I LOVED this spinach. It wasn’t completely cooked through, so it was still a bit crunchy, yet somewhat wilted. I want to try to recreate this.

Sunday was SUCH a lazy day! We did nothing which was just what I wanted! One of my best friends who lives in NYC came home for the weekend, so she came by Jasons to say hi. It was so nice to catch up with her, I wish my best friends lived closer!

Speaking of best friends, my other best friend who lives in NYC made one of my recipes and took a picture to show me!

She made the panko crusted tofu. On the side was roasted broccoli rabe and a pear, onion and Brussels sprout dish which I asked her for the recipe! I <3 this picture!

For dinner, Sunday night I used the rest of my Houstons chicken.

ANd made Chicken pizzas for both me and Jason.

1 high fiber tortilla with tomato sauce, sauteed peppers and mushrooms, topped with the pulled white chicken and mozzarella cheese! OMG yum. Leftovers ROCK

I had a simple, 1 min salad on the side with mixed greens, dried cranberries, and carrots

Yesterday, I finally came to read the Lady Gaga article I had been wanting to for a while, because I <3 her!!

ANd I am obsessed with this quote from her

Monday night started the beginning of Passover. For those who don’t know this,  I am Jewish.  So this is another reason I couldn’t blog last night. I had about 20 minutes to shower, get ready and go to Jasons parents house for a Passover Seder. Here is a little history if you are interested

What is Passover? Pesach, meaning “passing over” or “protection” in Hebrew, is derived from the instructions given to Moses by G-d . In order to encourage the Pharaoh to free the Israelites, G-d intended to kill the first-born of both man and beast. To protect themselves, the Israelites were told to mark their dwellings with lambs blood so that G-d could identify and ‘pass-over’ their homes

 What is Matzah? A hard, cracker-like bread made from a dough of only flour and water which has not been allowed to rise. We eat this matzah to remember how quickly we left Egypt, and the pure faith we had in G-d, that He would save us.

I wanted to share this with you all because sadly, there will not be so many delicious pictures of oatmeal or oatbran. I try to keep passover, although at times difficult, this weeks food will not be the best, I hope you understand. 

  • SO I am off to get ready and head to work. I am working till 8pm tonight, then opening at 5am tomorrow morning on MY BIRTHDAY. no HUGE plans for me. I am meeting up with two of my friends for lunch, then probably a casual dinner with Jason. My parents are away and coming back tomorrow night!!

  • Who is one of your favorite artists/bands and why? I LOVE Lada Gaga not only because I love her music, but I think she is so unique and a true artist. I love seeing what she comes up with, her creativity blows my mind!
