Phew, what a day! Its almost Wednesday, half week, so thats all I am thinking about! Does anyone else think that the bachelorette is getting a bit boring? I mean, don't get me wrong, its my guilty pleasure TV show, but for some reason my attention is not staying put this season with Ali! I think it has gotten a bit corny and expected, so nothing is that exciting anymore. The whole thing with Justin last night was so over dramatic! Last night while cooking, I munched on some Newmans Own Organic pretzels. Hey, they are packed with protein!! I haven't yet had these and they were So good!! had two handfuls
There was some sunflower seed butter dipping as well
For dinner, I whipped up another batch of bean burgers, this time canelli bean burgers! I really love to use what I have on hand, so this is just what I did.
Cannelli Bean Burgers
- 1 Can Cannelli Beans
- 1/3 C oatbran
- 1 Egg
- 1 T Cumin
- 1/2 t Cayanne pepper
- 1/4 t each salt and black pepper
- 1 T Oregano
- 1/2 Sweet onion-chopped
- 1/2 Red bell Pepper (can use any color)-chopped
- 1 1/2 t crushed garlic
- Cook onion, pepper and garlic in a pan with a little bit of olive oil. Cook for about 5minutes or until tender
- In a separate bowl, place the drained beans and smash with a fork
- Add all of the spices, egg and oat bran
- Add the sauteed onion and pepper and garlic
- Mix all together until well combined
- Spoon out into small ball sized bites or burger sized bites
- cook at 350 degrees for about 30-35 minutes, flipping halfway
Looks yucky, tastes amazing!
I made a refreshing salad with cucumber, red pepper, tomatoes, 1/4 of an apple, dried cranberries, goat cheese and romaine lettuce
Topped with the Burger!! This was so delicious!!
On the side I cooked up some collard greens with a bit of sea salt, garlic and topped with nooch.
For dessert, I was so excited to try some samples I got from YUMNUTS
