Steel Cut Love

Hey guys! Happy ALMOST Friday! Thats what I am looking forward to. It was a short week so I cannot complain though!

I enjoyed some Dunkins Iced coffee yesterday with some PureVia since it was still swealtering or "Opressive" which I have heard about 50 times in teh past few days by the meteorologists. After you hear a word so much over and over again, I really never want to say or hear it again!!

Lunch was typical. I know its an extreme repeat of what I eat for lunch, but when I pack food for work, its just so easy to make and with my new Manna Bread, I knew I needed to use some of that deliciousness! I used the Rye Sourdough Bread which was dense and fantastic! I coudl tell that I would like it even more if it was toasted though
I was browsing the new Oxygen Magazine and noticed a familiar picture! Check out the Apple and Peanut butter. I have seen that before?!?!

Its the same graphic on my blog. They copied me, I know it :)
My workout was P90X Shoulders and Arms. I love this workout. My arms are always shaking at the end. I really do push myself and work hard! I started with a INSANITY warm up of 10 minutes, then did the whole P90X dvd. It was a great workout. I am still going back and fourth between buying Turbo Fire or not. I have come to realize that I love workout DVD's. I would have NEVER thought that I would be one of 'those' people that workout in their house and follow a DVD, but I love it. I push myself in a different way than when I am at the gym, by myself. Will I ever get back to the gym? YES, of course, but for now, I am enjoying this change of pace!

I refueled with some Jay Robb Chocolate Whey protein powder mixed with 1/4 C skim milk, water and ice in my blender bottle.

I also had a golden delicious apple (and an unpictured greek yogurt a bit later)

last night after I got home, I decided to use these Steel Cut Oats that i havent had/used in SO long! I keep seeing Scottish Oats and Steel Cut oats around the blogosphere, so I figured I would give it whirl. I cooked up 1/4 C in water on the stove top
Creamy goodness! I put it right in the fridge to use for my breakfast this morning!
I finally made GOOD peanut butter! I listened to the advice of Ashley, to NOT mix any syrup, honey or extras into the nuts themselves until after it is blended. I just used some unsalted peanuts and after a few minutes, it became a creamy perfection! After it was mixed and taste tested, I added some banana to the mix!

It was SO good! I also added some Kosher salt to bring out the flavor

My steel cut oats turned into this masterpiece
  • 1/4 C steel cut oats cooked in water

  • 1/3 C no salt cottage cheese

  • 1 scoop Sun Warrior Chocolate PP

  • handful blueberries

  • 1/2 banana

  • 2 diced strawberries

  • 5 Drops of Vanilla liquid Stevia

  • 1 T walnuts

Oh it was so good! Cold and creamy and Chocolatey. Steel Cut> Rolled

I got this beauty in the mail from the peeps at CLIF!

I'll let ya know what I think when I break into it! It looks and feels like a Nature Valley bar (love those!)

Lunch time! A blueberry filled ensalada

Manna Bread topped with Laughing cow, cucumber slices, Nutritonal Yeast, sprouts and a veggie burg. I am teaching SPIN later which I am looking forward to!
