Easy Peasy, grain-free pancakes. Add whatever fruit you like and whatever toppings you like. These were fluffy and DELICIOUS. So easy I can hardly stand it. Have some extra time? Treat Yo' Self! <3

Ingredients
2T coconut flour (I have organic)
1 whole egg
2 egg whites
1/2T cinnamon
1T flaxseed meal
1T Greek Yogurt
1 packet of stevia (optional)
1/4C blueberries
1/3 banana
pinch of sea salt
1/2tsp baking powder
2T almond milk
Instructions
Place coconut flour, cinnamon, baking powder, salt, flaxseed and stevia in a bowl. Mix well.
Add in eggs, almond milk, Greek yogurt.
Mix everything until batter is well incorporated. Let sit for 3-5 minutes.
Meanwhile, heat a skillet under medium heat and use fat of choice (coconut oil, olive oil, olive oil spray, butter etc) to lightly coat the bottom
Pour a bit of the batter in the pan into your pancake size of choice. I made about 5 medium sized cakes but you can make them smaller (silver dollars!) or larger (ihop style!) This is up to you!
Add in fruit of choice once batter is poured in the skillet. I used blueberries and some banana slices, sliced thin.
When batter begins to bubble, flip and cook an additional 2 minutes until golden brown.
Place on a pan when cooked through and top with whatever you would like!
SUGGESTIONS: Nut butter, coconut oil, maple syrup, butter, fruit, greek yogurt, sprinkle of unsweetened cocoa powder.
