Back in My Life!! :)

Wow I am beyond overwhelmed with your comments, tweets, emails, etc regarding my first fitness competition recap. I am still in awe with all of the support I recieved this weekend from my family, friends and you all!! It feels surreal. Many competitors talk about ‘post show depression’ and not having that ‘goal’ so close at hand, but to be honest, I have been on a high this whole week. A high of positive energy that I plan to continue so there will be NO post show depression posts here! I couldn’t wait to get back to the grocery store and get an abundance of fruits, vegetables and real, whole, healthy foods. Towards the end of the competition prep, the diet was the hardest part and boring to say the least. Now, when I walk into the grocery store, I can’t wait to grab the healthy foods that I so missed! I also can’t wait to get busy in the kitchen as I been eyeing so many recipes such as  Jessicas Homemade Fish sticks and her Mojito Tilapia Bites. Janethas fish tacos look UHmazing. Ashley’s amazing breakfast bakes and cornbread have also been calling my name

These are just  a FEW recipes I want to try!!! 
So last night I couldn’t wait to get back to kale chips! They are by far one of my favorite vegetable side dishes and I missed it so much! I got a big bunch of it from Whole Foods earlier.
The way i prep is I just take off all of the ‘leaves’ from the rib of the kale and spread it out evenly on a cookie sheet. I spray the cookie sheet with EVOO spray and coat the kale in all sorts of goodness

The goodness being a mix of italian seasoning, olive oil, Nutritional yeast and sea salt.
I cover the kale in a mixture of all 4 of these products
Bake at 400 degrees for about 15 minutes (turning about every 5 minutes)
Meanwhile I put together a great salad with smoked salmon as my protein! I had a huge craving for it, and oddly enough I did right after my show too! My first post show dinner, as you know, I got a turkey sandwich, but my mom got bagels and lox and I had a few bites!
The salad had artichoke hearts, sprouts, red bell pepper, lettuce and cucumbers
I gave the salad a hefty spray of Braggs Liquid Aminos
And amazingly delicious, smokey and salty lox! (It was from Trader Joes)
And the crunchy kale chips (dipped in mustard!)

This Morning: 
I couldn’t wait to get back to my oatmeal concoction! First up, I brewed some of this coffee that I picked up at TJ Maxx yesterday (while I was Mothers day shopping–shhh)
Blueberry Cinnamon Crumble Coffee by Grande Kaffe Collection Oh it was good. Not as blueberry as I thought, but a great combinatiom of blueberry, cinnamon and spice. I can tell this would be great iced!
I cooked up some oatbran last night and this morning all I do is heat it up! Makes life a little easier to prep. I added about 1/2 T of unsweetened cocoa powder to the oatbran
Along with a generous sprinkling of ground nutmeg
Eggwhites, berries and oatbran!
Sorry for the picture overload, but its just been so long since I enjoyed this I went snap happy! I also topped it with 1/2 T of coconut oil (side note-I keep my coconut oil in the cabinet in my kitchen but since its getting warmer out its melty in the jar. Should I be storing it in the fridge?)
I picked up these cuties from Trader Joes. They are snack size Jazz apples!!
So stinkin cute! Can’t wait to dig in!
Oh and just so ya know, after I went out (before we had to go back out for the finals) I had my first pretzel dipped in peanut butter. Now I remember why I love peanut butter so much!!!
