Mothers Day Deliciousness!

Hey guys!! Yes, I took a big break…I spent the weekend with family and friends and honestly…it was just what I needed. You know I have talked about getting that balance back in my life that I so dearly missed as the hardcore prep for my competition began, and I am happy to say I am getting there slowly but surely. Its hard to just come off of this plan and all of the sudden get back to ‘normal life’ and ‘normal eating’ I will say that each day gets better and I am so looking forward to having an amazing summer filled with friends, fun, sun and good eats!

I also want to address the questions I recieved regarding my show, and I am taking my time with those because I don’t feel that its something I can or want to rush through. SO that should be up this week! For now, I would like to recap the day that is dedicated to the most amazing, beautiful, fit mama in the world….Mothers day!

For mothers day, we were having a get together later in the day at my parents house. My brother and I were in charge of bringing the ‘extras’ meaning not the main dish that were were grilling (which was chicken and fish) I decided to make a bean salad that I had come across that looked perfect for summer, light and delicious! It is Roasted Corn and Eddamame Salad from Alton Brown via TheFoodNetwork.


I began putting the eddamame, corn, scallions and garlic in a dish. Into the oven it went for about 30 minutes (it said shorter in the recipe, but mine needed longer!)
Post roast! I was tossing and turning the bean mixture about every 8-10 minutes to make sure they all were cooking evenly and browning up like they were supposed to!
Meanwhile I got to chopping the tomato and fresh basil (FRESH here, people) it makes a huge difference rather than using the dried basil out of the spice jar.
When the bean mixture was done, I put it in the bowl with the basil, tomato and added some red wine vinegar
Toss to coat, and threw the whole bowl in the fridge to cool until it was ready to bring over to my parents house!

Roasted Corn and Eddamame Salad (Alton Brown via the Food Network)

Ingredients

  • 12 ounces fresh or frozen shelled edamame, about 2 cups
  • 1/2 cup fresh corn kernels, about 2 ears of corn
  • 1/4 cup finely diced scallion
  • clove garlic, minced
  • 1 tablespoon olive oil
  • 3/4 teaspoon kosher salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 cup chopped fresh tomato
  • 1/4 cup chopped fresh basil leaves
  • 1 tablespoon red wine vinegar

Directions

Preheat the oven to 400 degrees F.
Place the edamame, corn, scallion, garlic, olive oil, salt and pepper into a 13 by 9 metal pan and stir to combine. Place on the middle rack of the oven and roast for 10 to 15 minutes, just until theedamame begins to brown. Remove from the oven and place in the refrigerator until completely cool, approximately 30 minutes.
Add the tomato, basil and vinegar to the edamame mixture and toss to combine. Taste and adjust seasoning, as desired. Serve chilled or at room temperature.

The bean salad was SUCH a hit. The only suggestion I would take for next time is to use GRAPE tomtoes, not the big heirloom ones that I used. The tomatoes definately should have given it a little more sweetness and that would certainly be solved by using either cherry or grape tomtaoes next time! Other than that, it was fabulous. Light and delicious

If you are wondering, yes there was dessert, but my camera died.  To give you a mental picture, there were 
  • cookies made my Becca, my brothers fiance which were delicious. We described them more as breakfast cakes than cookies because they were packed with huge chunks of apple, raisins, oats and were so doughy! 
  • My dad picked up a pint of my moms all time favorite frozen yogurt. 
  • My brother made homemade whipped cream with real vanilla bean, soaked strawberries in lemon sugar and had made strawberry shortcakes.
All in all it was a fabulous mothers day. I love my mom. She is my best friend, role model and most amazing person I know. She is always honest, thoughtful, caring, kind, positive, upbeat and beautiful! HAPPY MOTHERS DAY to all of you beautiful mothers, and mothers to be!!
