Dinnah Galore and more!

Well just around 5pm I felt a grumble in my tummy (right around the time it should be grumbling) isn’t it almost scary how much we know our bodies so well?? Its like clockwork I know when I will be hungry!


I looked into my cabinet and decided to have some PB2. Now, I am not the biggest fan of this stuff, mostly because I

I made a PB2 and sugar free raspberry preserve Sammie on Trader Joes low carb whole wheat wrap! TJ’s got it right yet again. These wraps are so doughy and delicious I just love them!

The BF and I were doing dinner together tonight. We try at least once during the work week (meaning Mon-Fri) to have dinner together. Sometimes we go out, sometimes we cook-depends on the mood. Tonight, We cook! We decided to pick up some pre marinated chicken and steak kebabs from Whole Foods, make a delish salad and He mentioned he had some frozen Trader Joes organic broccoli, so lemony broccoli it was for our side dish!

I can never walk into WF and JUST get what I was told! I decided to pick up the newest SmartWater Sport cap bottle! I LOVE SmartWater and the spot cap sold me! Now, call me dumb BUT I had the hardest time getting this sport cap to open up! It took me about 10 minutes to get the stupid thing off!! Note: SmartWater is awesome, but stick with the twisty cap bottles


I also picked up some Scandinavian crisp bread! This is a new product to me, but the packaging caught my eye. It as 12 calories per cracker with 7g carb, 5g of which is fiber! It is also very low in sodium, only 30mg I will give a full review later today when I have a few pieces with my ensalada

Dinner was ready to prepare. Below is the salad!

-baby romaine
-cukes
-red bell peppah
-strawberries, diced
-red grapes cut in half
-feta I made my homemade dressing!
-Grainy Dijon mustard
-1/2 fresh lemon juice (SUCH a difference from the bottled lemon juice)
-balsamic vinegar
-teeny bit of EVOO

Check out the Awesome salad tongs we used! The BF loves tools and his garage and working on his bike and truck and all things ‘manly’ SO I got him these cute salad tongs from an awesome website called perpetual kid! Check it out! There are a ton of cute kitchen and cooking gadgets!

Ok, so the BF as usual used his favorite dressing, and not mine. I was expecting this as he is very attached to his Brianna’s Strawberry dressing. This stuff IS all natural, so I will give that to him, but how can you beat my HOMEMADE dressing?? Oh well, more for me!


I don’t know why, but I just can’t stand pine nuts! I have never acquired a taste for these little guys! The only way I semi enjoy them is toasted then tossed in a salad, but even then, I pick around them. The BF would probably marry pine nuts if he could. He eats them by the handful which I don’t get! We had a bit of a NUT FACE-OFF!

Trader Joes Brocolli tossed with fresh lemon Juice.

Half of our kebabs (half eaten that is-SORRY!) skewerless!. We find that the kebabs, chicken especially have quite a difficult time cooking. They are so plump and thick in diameter that they always take twice as long and they also never seem to stay on the kebab, we always end up taking them off the skewer and put them directly on the grill to cook faster. Sadly, these were a bit crunchy on the outside because of the unevenness of the meat. BUT the steak was perfectly cooked!
I HAD to share a picture of the final product of the cupcakes I made my friend for her birthday. I made purple frosting! I paid very close attention to how many drops of the red and blue it takes to make the color. For some reason I ALWAYS screw this up!

    Those cupcakes are adorable!! The lavendar color turned out so pretty. I’m with you on the walnuts, especially in salads with some fruit. I’ve only tried a few good recipes with pine nuts but walnuts and almonds have the kinda crunch I’m looking for

    Cool salad tongs! I don’t like pine nuts either. I like almonds in my salad and cashews as a treat.
    I love kebabs. I use shrimp on mine because they tend to cook at the same rate as the veggies.

    I vote for pine nuts. Walnuts are just a tad bitter for me. Going to post some pine nut madeleines one of these days. Also have some pine nut apricot cookies in an old post- recipe is Giada’s.
    Do you ever go into Whole Foods and come out with only what you needed? I never do!!! I find so many things I want to try; love their produce dept. AND their seafood!

    that is so great that you guys try to designate one day during the workweek to enjoy a dinner together! the week can get very hectic sometimes- its nice to sloww things down 😉 of course he would use HIS favorite dressing ahha when do boys think about the needs and wants of us? haha
