Pumpkin Flax Bread Recipe and 2 New Products!

I love spin. Have I told you all of this before? I love it with all my heart. The rush from the music, the intensity of the class, the power, strength and endurance I have built up from taking spin classes. I would marry it if I could (but that would be wierd) I am now certified myself and will be teaching class on December 1st at work, can’t wait!

I took a spin class this morning and It was the best one I have taken in a while. I pushed myself extra hard and really was in my zone. I also love that the lights are dark in the room, it makes you focus on yourself, form, breathing, intensity, rather than checking yourself out in the mirror or checking out others (in my gym I have no worries with that!)

Breakfast was eaten right before spin and it was my beloved Oatbran (Ahh I love oh so much!-not as much as my hubby Ryan Reynolds)

Yes this is in a large ‘Jewish Penicillin’ Mug AKA matzoh ball soup mug
mmmm…I love the creamines and texture of this warm comforting breakfast. it was accompanied with 1/2 banana, frozen berries, chia seeds, 1 truvia packet and cinnamon (also 1 tbsp of unpictured PB on the side)

I also made a delicious Pumpkin Flax quick bread the other day that I would LOVE to share with all of you!

Pumpkin Flax Quick Bread

Ingredients

  • 2 tablespoons flax seed meal
  • 6 tablespoons water
  • 1 1/2 cups sugar
  • 1 cup canned pumpkin puree
  • 1/2 cup applesauce
  • 1 1/3 cups all-purpose flour  ( I used whole wheat flour)
  • 1/3 cup whole wheat pastry flour  (I used regular flour)
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 3/4 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves

Directions

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease one 9×5 inch loaf pan.
  • Whisk together flax seed meal and water. Mix in sugar, pumpkin and apple sauce.
  • In a large bowl, stir together all-purpose flour, whole wheat flour, baking soda, cinnamon, salt, baking powder, nutmeg, and cloves. Add flour mixture to pumpkin mixture; stir until smooth. Pour batter into prepared pan.
  • Bake in preheated oven for 65 to 70 minutes, until a toothpick inserted into center of the loaf comes out clean.
Mmmm…I added dried cranberries to the loaf. This was fantastic! I do think it was a bit salty and that could have been due to the fact that I used kosher salt and I eyeballed it, I didn’t measure out the correct amount! opps…that was my fault! all in all this was a delicious, healthy loaf!

great article on the best PB’s (I didn’t pay attention to the non ‘all natural’ PB’s but Krema won the best all natural creamy PB! (Krema owns our dear Crazy Richards!!)
I also had a chance to try for the FIRST TIME! Vanilla Chobani! To be frank with you all, I haven’t tried any of the fruity flavored greek yogurt’s for two reasons (1) I love mixing my own fruit in them! (2) way high sugar content in the fruity ones!
I did notice that the sugar and calories weren’t that much higher than the plain Chobani so I gave it a try!

Banana Nut Vita Top (delicious by the way!) Next time I am toasting this guy though 🙂 It wasn’t as dry as I thought it would be. I really liked the large walnut chunks throughout the top! The strong banana flavor was there, and it was great crumbled in the yogurt. I can only imagine what this will taste like toasted with some PB on top!!
mmmmm. I really liked this combination. Verdict on the Vanilla Chobani? It was tasty! very different than what I am used to with the plain Chob’s but it had a not too sweet vanilla flavor that paired nicely with the banana nut Vitatop. I will certainly be eating this flavor again!

Another new product for me today was the TempehTations that I have seen so much of in the blogosphere.
Ginger Teriyaki flavored tempehtations
  • Calories: 160

  • Fat: 4.5g

  • Sodium: 560mg (a bit high)

  • Carb: 18g

  • Fiber: 5g

  • Protein: 11g

I made a simple stirfry and topped it with some tomato sauce
Sounds wierd, but it worked! I really liked these tempehtations! I think this is one way to get me to eat tempeh. I am just not a huge fan of the stuff with no marinade, right out of the package-I have tried and I just can’t stomach it! So well done, Tempehtations!
QUESTION: Is there a common food product or food that you don’t enjoy but try really hard to because a lot of people around you seem to enjoy it? for me, its Tempeh!
Current Obsession-Adam Lambert “For Your entertainment” seriously, go on youtube and look at this kid and song, omg its just amazing right now! its on repeat (yes, I will probably be sick of it in 1 week flat)

    I haven’t tried to vanilla chobs yet and i really want to. i love love love vanilla greek yogurt, so i bet you this would be awesome! i havent been able to find chobani in my grocery store at all, just oikos. o and if i didn’t mention it to you, i’m so totally jealous that you have vita’s! if u wanna marry spin class, can i please marry vita tops! heheh

    haha, if I don’t like a food, I don’t like it, and I don’t care what others think of it! I guess tofu COULD count as an example, as I know it’s healthy, but I do like it, it just gives me gas. I don’t like to follow trends, I set them, 🙂 muahaha, jk.

    I love the idea of a quick bread but I have never made one. Working with yeast always freaks me out a little bit, so I love that you don’t need it for this recipe.

    LOVE your passion for spin! That is going to come out in your teaching and you are just going to be amazing! I need to give tempeh a second try…I could deal with the texture the first time I tried it. Love vitas and vanilla chobani yum yum

    I love spinning class too! the music and the hit of the music plus the darkness, all magically combines to be a perfect workout!

    I’ve never tried tempeh, but I don’t know I think I might not like it!

    oh I’ll tell ya girl…I LOVE spin too!! isnt it so fun?! Its true though, ive seen such a huge increase in my endurance and its one of the best cardio workouts (I think) Thats so super awesome you are certified as a spin teacher!! This is something that Ive been lookin to do. Congrats!!!

    Ryan Reynolds is great, I love the movie Just Friends, it always cracks me up for some reason.

    And I’m with you on flavored yogurt–I only buy plain Greek yogurt and add in my own fixings.

    Finally, I love the Banana Nut Vita toasted with Earth Balance or plain Chobani. Yum!

    mmmmm that bread looks great! and ok i dont know if i have mentioned this yet since your blog is FINALLY updating in my reader, but i LOVE the fork and knife layout. it is the most unique/cute/clever layout in blogland. was that your idea?! i love it.

    i am the exact same way when it comes to flavored GY. but the vanilla is lowest in carbs/sugars so i am OK with it. i actually had that same flavor saturday.

    the banana nut vitas are incredible! can’t find them in stores though 🙁

    there are no foods that i try to enjoy.. but then again the only foods i dont like are raisins and hot dogs. other than that i am pretty open to whatever.

    oh, except heavenly hash. that shiz is nasty, nothing heavenly about it! haha we had thanksgiving yesterday and that was one dish. i was like how the heck do you people like this stuff?!

    anyway, i am working on catching up on my blog reading and yours was the first i came to, i am so glad your blog is updating and that i now have time to read.. off to check out the next 5 posts of yours that i missed!
