Mexican Fiestaaa…OLE!

Sunday Funday, no? Ok maybe Sunday isn’t the most amazing day in the world, but its a new year so optimism is what I am all about! I left you all Friday right before I went to a fun dinner with my brother, his girlfriend and Jason. The restaurant was called Max and Dylans and it was pretty good! Not amazing, but not terrible. I wouldn’t be rushing to go back, but decent food.

Ginger/teriyake edamame with sesame seeds and ginger on top (so salty!) I only had a few
Greek salad

I got the Grilled salmon with sauteed spinach and asparagus (instead of mashed potatoes)
Jason got the pizza margharita
My brothers girlfriend got the pan roasted halibut served over risotto
My brother got the ahi-tuna burger with fries

We went to a bar afterwards for a few drinks with some of Jasons friends. This was from the 2nd floor. It was packeddd

I went to the gym afterwards and was planned on a run and some weights but the second i started running, I realized I had drunk too much water before hand AND my knee began to hurt a little bit so I listened to my body and moved over to the arc trainer. I did 20 minutes on the arc all different levels, then 10 minutes in the step mill followed by a weight circut. I went through this twice so when I say 2 sets, I did one of everything then back around once more for a 2nd set
  • 2 sets of 15 arnold presses while on bosu
  • 2 sets of 15 each leg bosu lunges
  • 2 sets 15 rear delt raises
  • 2 sets 15 squats on bosu with 8lb med ball
  • Jump rope (1 min)
  • 2 sets 15 hip raises on bosu
finished up with 10 minutes on the stepmill and abs
  • ball crunches (1 min)
  • Bosu alternating crunches (1 min)
  • toe taps (1 min)
  • reverse crunches with stability ball between my legs (1 min)
  • Repeat twice


Post workout snack. 1/2 C cottage cheese and serving of sea salt soy crisps for those high GI carbs!
Lunch was the usual salad that I have been craving with pumpkin spiced chickpeas
Tofu salad made with stone ground mustard, dollop of cottage cheese and sesame blend spices

Eaten around 5:00. With some cinnamon. (I am waiting for the apple cinnamon Chobani!!)

For dinner, we were both so tired, we decided to cook up a mexican dinner! (by WE I mean, I)
Sliced some peppers

Sauteed some peppers and onions
Fajita marinated chicken
  • Diced chicken breast
  • 1/2 packet Fajita seasoning (only used half because of the high sodium content)
  • about a TBSP of Mrs Dash Mexican seasoning blend (Jason didn’t even know!) but I used this to cut out some of the sodium
  • Juice of 1 lime and some zest
  • Salt and pepper to taste
  • 2 tsp crushed garlic
  • Let it sit for 10 minutes-1 hour ( I did about 45 minutes)
  • Cook in skillet till no longer pink (about 10 minutes)
Mix with the rest of the veggies ( I threw in some Broccoli rabe for me!)

Homemade Guacamole
  • 2 Avocados-ripe!
  • 1/2 beefsteak tomato
  • juice of 1/2 lime (it was very juicy!)
  • salt and pepper to taste
  • Mix all around and VOILA!

The mexican feast in its entirety with low carb tortillas and a salad.

Today I had a bridal shower for Jason’s brother’s fiance. It  was at noon. This was my first bridal shower ever! it was so nice.

Each table was given an array of mini sandwiches

Chicken salad on croissants
Crustless egg salad on white bread

Smoked salmon and cream cheese on rye (my favorite!)

Roast beef + blue cheese with romaine on the right and mushroom + cream cheese + romaine on the left.

Lots of these chocolate and white chocolate covered cashews. I had about 5.

Cake to-go! I was too full for cake at the time but I took some home for me and Jason to enjoy later. I brought raspberry and lemon and also raspberry and butter cream.

    Those are the same measuring spoons my hubby and I gave for my shower! I love them and still use them everytime I cook/bake. I can’t believe that was your first shower!!

    I bet doing all those moves on the bosu are hard! I recently started incorporating some moves like push ups on the bosu.. it really works ya!!

    All the food from the restaurant looked delicious- I love the combo of dried cranberries and Gorgonzola in salads, and salmon’s my fav dish ever (good choice!) And the “Recipe for the Perfect Marriage” Bridal shower gifts are adorable!!

    ps- Apple Cinnamon Chobani sounds sooooo good!(are they gonna make it?)

    Bummer that the food at the restaurant was just ok. We only go out once a week so I always want the food to be spectacular :). The pizza margharita looks pretty awesome though. Nice job on the mexican- love cooked up onions and peps. Beautiful bridal shower too. I would have been all over those chocolate covered cashews mmmm. Hope your week goes well!

    The homemade guac looks good! I had chips and guac on Saturday night. I’m glad my friend took the leftovers cuz I couldn’t stop snacking!

    I think Apple cinnamon Chobani would be rockin! I hope they make that soon! I think they need to employ some of us food bloggers to come up with some awesome new flavors!=)

    FYI, you totally inspired me to make the pumpkin spiced chickpeas this week. I’ve made roasted chickpeas once before, and forgot how good they are!

    Your eats are making me drool, as always. That cake looks so good, it’s making me re-think that carrot cake in the fridge for Nick’s b-day…haha.

    Also I think the idea of an ahi-tuna burger sounds fantastic. I want to try one at home, with the tuna steaks at Trader Joe’s!! I would just love it.
