Monstah Post!

Hey guys! I’m back. Yes I did take a small hiatus, and thats A-OK with me, since I had a great weekend filled with maybe a little too much sun. It was a great 4th of July weekend, and always hard to snap right back into reality. Don’t you agree? The weekend started off with a bang. Friday night, we went to dinner at a local restaurant that went went to on my birthday, called Lexx
I started with a simple spinach salad served with creamy goat cheese and beets. I wish the beets had a bit more flavor, and had about 3x more than served on the spinach, but it was a decent starter salad. I just hate when salads are all lettuce! I felt like I was chowing down on spinach for the most part

My entree was delicious, though! I got the special which was roasted cod fish served atop a ragu of corn, sweet potato, mushrooms and caramalized onion. It was all topped with a light citrus sauce, that was a bit orangy. I loved this dish!
Saturday, we woke up and had a KILLER workout! We decided to take advantage of the fact that it wasn’t too hot outside (yet) and woke up around 8 and hit the pavement. We ran to the local track and once there, did a great track workout. This was the best outdoor workout I have had in a LONG time.
We did lots of speed and interval work that looked like this: 
  • Sprint the long, walk on the curves
  • High knees the long, butt kicks on the curves
  • Side shuffle the long, power walk on the curves
  • Spring the long, Lunges on the curves
  • Core work in between

Later in the day, we had lunch looking at this site. Not too shabby, right? This is Marina Bay in Quincy, MA
We ate here! Port 305, which is acutally a new restaurant to Marina Bay.You can’t beat the view, no matter what the food is like!
I got the cobb salad, no bacon (sorry, Jess!) but I don’t eat bacon. The salad was decent. Nothing crazy, nothing extremely delicious, but it was basically just what it looks like! I did love the dish that it was served in.
Sunday consisted of a whole lot of this. Beachin’ it. Ahhh it was so beautiful, relaxing and HOT. 

And saw lots of this! 240 lb tuna! This was the biggest fish I have ever seen be brought in on the dock!

Monday night for dinner, I felt like I needed some healthy food! I made a delicious big salad with romaine, red pepper, tomatoes, blueberries and avocado
We grilled some squash and zuch medallions in some salt pepper and olive oil
And delicious grilled chicken atop the salad. Perfect, just what I wanted

Yesterday, I enjoyed a bowl of oats with some blueberries, banana, strawberries and cinnamon. I had this post P90X. I did the plyometrics dvd. Today is one of the weight training P90X DVD. Beachbody came out with a new workout called “Turbo Fire” That I am tempted to get!

Yeah, normal? This was around 1:15pm yesterday. Too hot to move!

I made a delicious salad! Baby spinach, cauliflower, grilled zuch and squash, raw sqaush and red pepper

Shopping in Whole Foods later. I saw this by the oatmeal! They are on to us, guys.


I picked up a new drink that I noticed. It is a Braggs Apple Cider Vinegar drink I am not 100% clear on the health benefits of apple cider vinegar, but I know its good for you! So I figured I would give it a try. I really enjoyed it! It tasted like an unfizzy Kombucha (which I miss so much!!) It was cool and refreshing and had a strong ginger flavor which I enjoyed!

My mom’s friend brought her fresh radishes, which we used in a salad for dinner. We also found a almost bad bag of spinach and decided to make Spinach Pesto!

Spinach and 5 cloves of garlic in the food processor

Added about 1/3 C walnuts
About 1/4 C (or a little less) of Parmesan Cheese. After pulsing a few times, we streamed in enough olive oil to make it all come together (maybe 1/3-1/2 C?)

This is the most convenient container to use on the grill! You can throw anything in there and it holds most veggies, corn…you name it, its a great grilling bowl

The goods. My dad had the veggie burger, my mom and had had the fresh grilled scallops. There was also grilled brussels sprouts, cauliflower and corn

This morning, I had a delicious bowl of overnight oats to wake up to! (and the heat!!)

  • 1/2 C oats
  • 1/4 C cottage cheese
  • 1 1/2 C water

in the morning added:
  • 1 scoop protein powder
  • 1/2 banana
  • blueberries
  • strawberries
  • Stevia
  • dollop of banana soft serve

Well my lovely friends, thats all I have for today! Its going to be a hot one! I am acutally happy I will be inside at work most of the day in air conditioning!! Have a great day!
  • When you grill food, are you the one who does the grilling, or is this the ‘man of the house” job? In my house, its split between my mom and dad, mostly my mom though. 
  • When you are HOT and want a beverage other than water, what do you reach for? For some reason I always crave Diet Coke in the HOT summer days, and I don’t even drink soda!!
  • What is your favorite GREEN food? I am loving my spinach pesto right now!
