I want to go to Belgium…For the Waffles

Happy Monday, guys! The weekend FLEW by didn’t it? I cannot believe it is August already! I am not ready for the summer to end! But I am not one of those people who will dwell on it, but instead just think about how much more fun in the sun I will have!!
Before I get into the weekend festitivies. I want to share this new bar I tried on Friday. Kardea Nutrition sent me some bars to try and I broke into this Cranberry Almond one on Friday.
Kardea Bars:

DEEEEELICIOUS. It was chewy, but there were some light, airy crunchies embedded in the chewiness, so it made for a great texture bar! The flavor was AMAZING. It had some chai spices in there that made it sweet, but not overly sweet. I really enjoyed it and it was a decent size as well!

Friday night, J and I had a casual dinner because we were waking up early to head to Cape Cod. We went to one of our fall back (and favorite) places, the Deluxe Town Diner, which is SO much more than a diner. It has amazing “real” food as well. I got the Cobb Salad with no bacon. It was baby romaine lettuce (loved that it wasn’t iceberg!) Sweet onions, avocado, grape tomatoes, grilled chicken and 1 hardboiled egg. I stole some black beans from J’s dish and topped those on my salad as well. I topped it with some balsamic vinegar, but honestly it was fine without dressing!
Saturday, we spent some time on the boat! It was the perfect evening. Cool and breezy!


For dinner, we went to a great place!! I got the lemon-honey roasted statler chicken breast

It was topped with grilled broccollini and served on a bed of orzo with griled veggies and feta! DELICIOUS

I don’t really drink besides the occasional glass of vino. I went with a red cab. Red wine has amazing benefits! Get this : Wine drinkers live 4.7 years longer than nondrinkers and 2.5 years longer than those who drink other forms of alcohol. This is possibly due to resveratrol, an antimicrobial phytoalexin found in dark grape skins which, in experiments, extends the lives of monkeys and fruit flies. But it may surprise you to learn that men who consume 20 grams—about two drinks’ worth—of any kind of alcohol daily have a 25 percent lower mortality risk than male nondrinkers. In moderation, “drinking relieves stress,” Zeines says. “It’s not always toxic, any more than oxygen is always toxic.”

After spending some time on the beach and boat, it was lunch time! I mad a small arugula salad with cucumbers, tomatoes and some spicy mustard

And welcome back the wrap!! A Josephs wrap with turkey breast, arugula, pickles, tomatoes and spicy mustard!

This morning, I started my day with some TURBO FIYAH. Awesome workout. Drenched as always. ( I am going to do some weights later today) I decided to whip up a protein packed waffle!!

WOWZA. This was delicious! Remind me why I don’t make these more often?



  • 4 egg whites
  • 1/2 scoop Sun Warrior
  • 1/2 C oats
  • splash of almond milk
  • 1 packet NuStevia
  • 1/2 C blueberries (half in the batter, half on top)
  • 1/2 C diced strawberries (on top)
  • 2 T SF maple syrup
SO GOOD. I want more!! I am definately going to work on this recipe to make it even BETTER

  • Are you a pancake, waffle or french toast person? For me, it depends, honestly I think I would be a french toast person, BUT that could change in an instant if someone makes me some KILLER pancakes or waffles!!
  • Beach or lake? I am SO a beach person!
  • What could I add to my pancakes to make them even BETTER? (keep it healthy!!)
