Happy New Year, Friends!!

Hey everyone! Seems I should probably blog again right? I had this whole past week off from work, but it was busier than you could imagine! I actually didn’t even open my computer for about 5 days straight. It was great. In other amazing news my brother got engaged to his long time girlfriend and we are SO excited!!! I never knew he was such a romantic but he did it in the most romantic way that sounded perfect! They are so happy and glowing. He is my older and only brother, so you can imagine the excitement in my family! I have some random pictures of some delicious food I have been enjoying this past week!

If you like balsamic vinegar, this is one of the most delicious kinds I have had! It is from Trader Joes (obviously) and it is so sweet and tangy
Last night for dinner my brother and his fiance came over and my mom made a casual dinner for us!
Salad. (I love the salad tongs!)
Pasta Punttenesca (roasted tomatoes, capers, garlic, basil, olive oil) Brussels sprouts, BBQ chicken breast, crusty bread

Some breakfast I have been enjoying. 
  • 1/4 C oatmeal
  • cinnamon, nutmeg
  • 3 egg whites (I cook them seperately and pour the oatmeal on top)
  • Roasted almonds

Another dinner I enjoyed this week had tomato sauce as the main player. I was CRAVING it one night and I had to give into that! I took some Barilla pasta sauce and combined it with some no salt cottage cheese

1/2 C sauce mixed with 1/4 C cottage cheese
I sauteed up some spinach and mushroom and cooked tofu in the oven. I topped the tofu and veggies on the sauce
It was perfect!
This dinner was surely a keeper and took no time at all!

My workouts have also been great this week. I have taken a step back and have not been AS intense, but I am doing this on purpose and giving my body a bit of a break. At the end of last week I was so tired. Not from sleep, but my body was just tired and telling me clearly it has had enough. I listened and took 2 full days off from the gym. I also took a Bikram Yoga class (hot yoga) which was amazing. I need to do that more! I also forgot how hot hot yoga really is! WOW, after about 2 minutes in the studio I was pouring sweat, literally. It felt so great afterwards though.
Some Goals for 2011 (just some, these are not all of them!)
  • Complete my bikini competition
  • Include more yoga into my workouts
  • LISTEN to my body more
  • Try new foods or recipes at least once every week or 2 weeks.
  • Try to be less rigid and more ‘go with the flow’ (I can be very set in my ways!)
  • Take more pictures
  • be more adapatable to change (I can easily freak out when something happens that wasn’t planned)

Continue to make health and fitness a part of my life. I love leading a healthy lifestyle and also passing on my knowledge to others.
