New Food…Packed Meals!

So I recently moved (well sorta recently) and up until now I have had no internet!! This somewhat explains my lack of blogging….well today…I got internet!!!! I am so excited I can blog and surf and play on my computer again! I have lots of pictures too! yessssss. This post is going to be somewhat all over the place, but I just have lots of pictures to share!

Since being on my kale chip kick…I decided to try another type of kale…I believe this is called dinosaur kale. It is not as crunchy looking but I wanted to experiment
Dinosaur kale! The real name is Lacinato Dinosaur kale. It is called this due to its bumpy skin like that of a dinosaur! (now, if I can get that image out of my mind I can enjoy it a bit more) Kale is a super healthy green that helps to support the body’s detoxification process. There are also over 45 different flavanoids in kale that combined hold powerful anti-oxidant and anti inflmmatory benefits. Eat up your greens!
I threw it on a cookie sheet with some zuchinni and topped everything with some no salt seasoning  a la Mrs Dash and nutritional yeast
While the veggies cooked away, I cooked up some shrimp (I usually always have them on hand in the freezer) In the morning I simply take out however many i want and transfer them to the fridge to let them thaw out.
I cooked them on the stovetop with turmeric, curry and Mrs Dash. The flavors made my kitchen smell like an Indian restaurant!
The shrimps were delicious! Normally I don’t like curry that much, so I have to space out when I have it. I find that if I have it too often, I get very sick of it and never go back! I like to use curry and my favorite is on shrimps, so I figured it had been a while! 
I seem to have not taken a picture of the final meal once everything was put together! I cannot believe it! But let me tell you that the dinosaur kale was awesome! I think I prefer the curly kale over the dinosaur but it was still really good and crunchy! I miss the crunch of food these days so it hit the spot. I dipped it in a whole lot of mustard!
And after dinner, I got busy on some meal prep! I don’t do everything on one day of the week, but about 2-3 days a week I prep for the next few days. Below is some butternut squash for those carbs!
I bought this container of butternut squash precut which is a great time saving tip! A bit more pricey, but to avoid cutting open a squash, it is totally worth it for me! I roasted it at 350 degrees for about 30 minutes with some rosemary, and Mrs Dash

Dinner the next evening was by far the best and most memorable of the week! My roommate and I made steak! We were both craving it big time. I picked up a grass-fed sirloin steak from Whole Foods. As soon as I got home, I coated the steak in rosemary and no salt seasoning and let it sit in a baggie until we were ready to roll!
I was researching how to cook steak inside (without a grill) After reading some articles, I went with the stove top and broil method.  We let the pan get screaming hot and placed the steak on it. 3 minutes each side, then slipped it into a pre broiled oven
Flipped!
Placed it on a rack and broiled it for about 12 minutes. We could hear it sizzle and made us even more hungry!
Served along side a baby spinach salad with red peppers and cucumbers
Done!
It was SO SO SO good! My body was craving real meat and this was delicious. This beef was tender and delicious! We are certainly making this again soon! I served it with some steamed spinach

Now…below is a picture of a typical day of food I bring to work. We have:
  •  Broccoli with turkey meatloaf
  • Greek yogurt + quinoa + pear
  • Baby spinach salad with broccoli, butternut squash, grilled chicken, seasonings
  • Roasted veggies with more turkey meatloaf

My new love!!! La Croix grapefruit flavored seltzer water! I find that seltzer really is helping to curb my hunger a bit since my diet is a-changing!

Another delicious meal I enjoyed yesterday. Greek  yogurt with 1/2 C quinoa and fresh strawberries! This is by far one of my favorites

  • Strawberries, Greek yogurt, strawberries
  • Broccoli, olive oil, grilled chicken and peppers!
