Tuna Quesadilla and Falafel Heaven!!

Well my bloggies, Last night’s dinner was off the charts delicious!! My family and I had a meeting in Quincy, MA which happens to be right across the street from Falafel King!

As you can see, this is not the fanciest of restaurants, but it is one of the best middle eastern places. Ever
My father is Israeli, born and raised there so I was brought up eating an abundance of middle eastern food like hummus, pita, grape leaves, falafel, tahini, olives, olive oils, etc. Not only is this my all time favorite cuisine, but it is very healthy too! (well for the most part!)

Mah Dinnah….Falafel King salad which is lettuce, cuke, tomato, grilled chicken, dollop of fresh tabouli, dollop of amazing hummus, tahini sauce drizzled on top AND it came with 2 falafels! (and pita of course!)

We ordered a side of the tabouli because it was SO good and yes I have left overs in my fridge as we speak! This was SOO good. Sometimes tabouli can be oily and mostly bulgar so it is more like cous-cous than it is tabouli, but not Falafel King’s! As you can see it is mostly greens of fresh cut parsley and mint. 
  • This was made with galic, fresh lemon juice, olive oil, bulger wheat, tomatoes
  • it is such a healthy side dish and a great addition to my salad for sure! I am so happy we have extra! It was light, lemony and fresh tasting!
Here is an easy Tabouli recipe!

Serves 4-6

3/4 cup boiling water
1/2 cup cracked wheat or fine bulgur
1/2 cup minced parsley
1/4 cup minced mint leaves
1/2 cup finely chopped green onion
1 tomato, diced
1 cucumber, seeded and diced
3 tablespoons olive oil
2 tablespoons lemon juice, or to taste
1 tsp. sea salt, or to taste
Pepper to taste
Pinch allspice

Pour boiling water over the cracked wheat, cover, and let stand about 20 minutes until wheat is tender and water is absorbed.  Add the chopped vegetables and toss to mix.  Combine oil or substitute, lemon juice, salt, pepper, and allspice.  Add to wheat mixture and mix well.  Chill.  Serve and enjoy.

Today’s Eats!

The morning started out well! it is a very nice october day here in Boston-hey its not snowing yet, I’ll take it!! Although the snow is fun, and I do love skiing, too much of the cold puts me in a sad state!
I started the day with a 4 miler on the treadmill. I did the 4 miles in 34 minutes. Great run and finished out that 40 minutes with some incline walking.

 I was really feeling it today! Some days are just better than others you know?
**What do you think makes YOU have a good day at the gym? Or on your run? is it that guilt of having that extra piece of cake the night before, or just the rush you get from an awesome workout??**

I was ready for this to get in mah belly!
  • 1/2 C oats
  • cinnamon
  • chia seeds
  • blueberries/strawberries added toward the end
  • 1/2 sliced nanner
  • 1 Truvia packet
  • Justins honey peanut butter drizzled on top!
Sometimes those Justins packets are quite large for all my oats so I do this with them to save them for the next time!
I will admit, this does take some self control. I could easily just squirt that whole packet into my mouth!! I was good today, pat on the back for meeee

Snack time hit me at around 11:30, it was time my loves, for my fav greek yogurt and apple!!!

Amazing Empire Apple-SO GOOD! It was crisp and not one nick or bruise. Thats the worst!!!

 After work today, I had some returns to make at Target. Or Tarjay as some call it. Any Target lovers in the house? Please stand up. Yes I would be right up in my chair. What a store, I mean did they create it for us to spend more money? Seriously, its impossible to walk into that store and NOT walk out empty handed! I walked out with these guys

On the way home, I got a wave of nausea from hunger. Luckily I remember I had this guy in my bag and took a lil bite of! These are Doctors Carbrite Diet Bars. 
Let me preface this bar, I am in no way dieting, as you all know BUT once in a while I like to have low carb bars like this on hand for instances like this! little hungry, eating lunch soon, don’t need a big, heavy bar and I really enjoy these! A bit artificial tasting, but they do the trick to hold me over! this would be my fav flavor, the S’mores. Although some real S’mores would have been a BIT better 🙂
Carb Rite Diet S’mores Bar
Lunchie time!! Today I am making a tuna quesadilla of sorts
Ingredients
  1. Low carb or whole wheat wrap
  2. My new Chipotle mustard
  3. Low fat shredded cheese
  4. few tomato slices
  5. homemade tuna salad made with dollop greek yogurt, chipotle mustard, diced red onion, diced celery
Mustard on the wrap!

Top with Tuna, Tomato, Cheese

Grill in a pan! DONE AND DONE! 
Verdict: This is a keeper! The mustard is great! its spicy and sweet and a bit grainy which I love. It really adds to the overall flavor. The tomatoes were warm and didn’t slip out when I took my big first bite (I cut this in half of course, c’mon, I’m no piggy!)
I was so excited to read this while eating my lunch toO!

Oh and I made this lil salad on the side. It looks bigger than it was. ANd that is a clear plate its on, its not a salad on the counter! haha

*What spa services are your fav?? I think I am in love with haircuts, the shampooing and massaging just hits the spot, although I do love pedicures too!*

    UMMMM I’m making that tuna quesadilla for dinner tonight…. it’s official!!~ And I usually have a great workout when I go to the gym with a positive mentality. I try to ALWAYS go thinking “I’m gonna kick this treadmill’s Assss right now!” haha…. but having a not-so-healthy eating day the day before will kick my butt into gear once I’m there also. 🙂

    I’ve never heated tuna, but this looks really good! My best workouts are when I am energetic. Sometimes a tough day makes for a better workout to get my frustrations out!

    My favorite spa treatment is getting my hair dyed- I even like the smell in a sick way!

    I used to be addicted to Better’s PB but after the last time I ran out, I never bought it again, I should!
    As for work outs, I usually feel like a good sweat means a good workout. Sometimes I don’t sweat, so I Feel like I did not work hard enough. Of course, sometimes the air is on and other times it’s not…So I shouldn’t use that as a way to determine the effectiveness of my workouts!

    I loved your idea of using stale bread for croutons (on my blog). I had not thought about that, I like it! I don’t eat a lot of salads, but croutons go well with soup!

    Great run! I’m not sure what motivates me to have a great run. There are times I’m dead tired, but I’ll get on the treadmill and pound out a great run. There are times I’ve just had too much caffeine and have a great workout. I wish I knew exactly what it was, because I’d make sure I’d do it every morning.

    I have spent years trying to figure out why some runs/yoga practices rock and are effortless and others are well….tons of effort. Even after controlling for weather, diet/food, sleep, there is still something unknown. If you figure it out, hollar. I’ve spent 20 yrs pondering 🙂

    I haven’t had much middle-eastern food. I need to indulge myself more with those delicious falafel! I don’t think I’m too much of a fan of tabbouleh, though.

    Oooooh, falafel! That looks awesome and thanks for the tabouli recipe! Last time I had tabouli it was SO LEMONY I couldn’t eat it 🙁

    You are one lucky girl, that kind of food is my absolute fav!!!! It all had me drooling, such wonderful spices and flavors.
    As I was reading your post, I was nodding my head along with. I think the pb packet is too large too (but of course I could squirt the whole thing on there), I love Tarjay and just went there after work today, and I loved your quick wrap and salad.
    I definitely have a good gym day when I’m not frazzles and eat enough, but not too much, throughout the day. I feel like I’m going to kickbox!

    LOVE middle eastern food. I couldn’t even pick a favorite part! Love it all. WISH I had grown up on it. Josh’s dad swears by those carb rite bars. We have a bundle in our house 🙂
