Whattttssss going on guys? Made it through Tuesday! (almost!) I am having a productive day over here.

All things I wanted to accomplish checked off!
Last night I knew I had a block of tofu that I was going to use for dinner. Although I am dying to make Mama Peas Tofu Ricotta Gnochhi,  I didn’t have all of the ingredients. I was insprired when I saw BBQ baked Tofu on Kaths Blog
I got started making homemade BBQ sauce.

  • 4 T Ketchup
  • 1 T Apple cider vinegar
  • Dash of garlic Salt
  • Dash of crushed red pepper
  • 2 T worcestire sauce
  • Dash Salt
I let the tofu absorb water in a dish towel for about 20 minutes. Sliced and placed in a sprayed baking dish

After all the BBQ sauce ingredients were in the bowl. I microwaved it for 35 seconds, to let all the flavors come together.


Poured it over the tofu to get nice and coated. I stuck it in the fridge for 20 minutes

I took it out and placed it in the oven at 375 degrees for about 30 minutes (flipping halfway)

Dinner is served!


It came out perfect! I could have let the tofu cook a little longer, as I like it a bit more firm, but once in a while its delicious to eat this way! The sauce was sweet and savory and thick

Roasted broccolli, this takes about 10 minutes in our oven, that I swear is on steroids

My roomate was in the mood to bake, so I showed her the Super Charge Me Cookies! This is just what we made!. (don’t mind the Rockstar and coffee mug, my other roommate is addicted to caffeine)

SUPER CHARGE ME COOKIES from DREENA’S VEGAN RECIPES

Makes 11–12 cookies. Wheat-free (using spelt flour & oats).




1 cup quick oats
2/3 cup spelt flour (we used whole wheat, it is all we had!)
1/4 tsp (rounded) sea salt
1/4 – 1/2 tsp cinnamon
1/8 cup unsweetened shredded coconut
1/4 –1/3 cup raisins or chopped dried fruit
3–4 tbsp carob or chocolate chips (optional; or use more dried fruit, nuts, or seeds)
1 tsp baking powder
1/3 cup flax meal (not flax seed)
1/2 cup pure maple syrup
3 tbsp almond butter (may use cashew, peanut, hemp seed butter)
1 1/2 tsp pure vanilla extract
2 tbsp organic canola oil

Preheat oven to 350°F (180°C). In a bowl, combine oats, flour, salt, cinnamon, coconut, raisins, and carob or chocolate chips, sift in baking powder, and stir until well combined. In a separate bowl, combine flax meal, syrup, almond butter, and vanilla and stir until well combined. Stir in oil. Add wet mixture to dry, and stir until just well combined (do not overmix). Line a baking sheet with parchment paper. Spoon batter onto baking sheet evenly space apart, and lightly flatten. Bake for 13 minutes (no longer, or they will dry out). Remove from oven and let cool on baking sheet for 1 minute (no longer), then transfer to a cooling rack.

Today, before Insanity, I had 1/3 of the biggest banana I have ever seen (TWSS) Seriously, I put a pen next to it so you could see the size, but this was HUGE

I was a sweaty mess. From the Fitnessista’s Post on her starting out month 2…I know that I have yet to get sweatier! Thats ok with me, the sweatier the better!

I forgot my usual eggwhites post workout, so I got them in the cafeteria today at work. This was the saddest looking plate of eggwhites! They were tasty though. I mean, its hard to screw up eggs, no?

Some Proats (protein oats)
  • 1/2 C oatbran cooked in water
  • 1/2 scoop protein powder (added toward the end)
  • 1/3 HUGE banana
  • 3 diced strawberries
  • about 15 blueberries added at the end
A guy at work gave me this little magazine! There is some great info in here!

And a recipe that I want to make ASAP!

Oh, of course I had coffee….Rain Forest Nut to be exact!

I also did a test…In many magazines and what not, it says “eat a handful of almonds” Well, I reached into my bag and pulled out a handful

On the left is 28 nuts (which is one serving: 190 calories, 16g fat, 6g protein, 5 g fiber) As you can see on the right was my extra! So it just goes to show that a handful surely can go well beyond a serving. NOW, I just did this beacuse I was curious. Like many of you know, I never calorie count or are nit picky about stuff like this BUT there are people out there who are trying very hard to lose weight and watching what they eat. This just goes to show that a serving is very decieving!

I came home and made a salad in about 30 seconds flat. My dressing was Salsa!!

And a Classic FitFodie wrap! Turkey breast, hummus, tomato, sprouts, lettuce!
