Name my "Thing"

See below for the reason of the title!


Hey guys. Is it me or is this week flying by already? This is good news to hear since I have a LONG weekend coming up in honor of Memorial day!  What have I been up to lately? Hmm lets see…work schedule is different this week because my manager is on vacation, so I am working some different shifts and filling in here and there. 

Fitness wise : This is my recovery week on INSANITY. 
I really like this dvd! It is definately not as intense and muscle pounding as the other ones, but gets my heart rate way up and still feel like a fabulous workout. We do this one exercise called “hip burners” WOW. My Hips and lower abs–what a workout. I acutally feel quite sore today because some of the moves in this dvd, my body is not used to. It is smaller movements but those movements are quite intense!

Life Wise: My Life is good! It is 90 degrees here today, I just got out of the shower and already sweating. Fab. I am presenting a healthy eating presentation at my Fathers Company this Thursday morning to a classroom of inner city kids. I am very excited. I brought a whole lot of food samples for them and the presentation looks good!
Yesterday’s lunch was a quick sandwich thanks to the lovely deli thins. I sandwiched a veggie burger, baby romaine, Laughing Cow wedge, tomatos and sprouts!


Some purchased veggies. Purchasing my veggies at work is a rare occurance, but I splurged, what can I say? And I love asparagus
Dessert was a probiotic chocolate bar (1/3 of it) 

New gum. I know THIS girl probably has tried it already!

Lime green! It was fun to chew. Not so fun after the flavor went away in about 3 minutes. Fruit and summery though, thats what I am all about

I had about 1/2 of a Luna bar later on. I was ravenous yesterday. This usually happens to me on Mondays, because I seem to not eat so much on Sundays, so it catches up with me the next day. I need to work on that

Dinner was leftover grilled chicken, roasted broc and sweet potato. Dinner in a tupperware, not ideal, but it was eaten at work. Oh well. Such is life

This morning, after my Insanity, It was bfast time

I Finally used my Tera’s Whey. This puppy was about $2.79 for this small packet! I needed to choose to use it wisely

Oops, it was $2.99! Great stats!

Mixed into the creamy oat bran. It was SO good

1/2 banana, 3 diced strawberries, 1/2 packet whey and some roasted almonds

Delicious Soymazing muffin a couple hours later.


Siggis! I love the plain the best. I added some frozen (thawed) blueberries

Some Kashi and more almonds. Love my fats

The JUICIEST D’Anjou pear. I love these!! Such a nice change from an apple for my snack

Lunch was lotsa veggies

And a simple wrap! Romaine, grilled chicken, red onion

And some carrots from my salad

And some dippage

Later when I got home, I begged my roomate to make her famous tomato/avocado/corn ‘thing’ (I need to get a name for it!)

Tomato/Avocado/Corn “thing”

Ingredients
  • 3 diced tomatoes
  • 1 can fire roated tomatoes (can use any kind)
  • 1 chopped avocado
  • 1/2 C premade salsa
  • 2 C corn (cooked in hot water, then pan roasted in a skillet)
Method
  • Combine everything in a bowl and mix well. 
  • Let chill 
  • The longer it sits, the better it gets
  • SO GOOD, Perfect for the summer!
Meanwhile, I got to making Janethas Garbanzo Bean Turkey Bake


Ready for oven lovin’ And THATS whats for dinner tonight. I will let you know tomorrow how it turns out (Delicious obviously, this is JANETHA we’re talking about, people!)
And I munched on some celery with some parmesan peppercorn WW cheese wedge

I got new veggie burgers at whole foods! Food for Life!
