Vrooooom Vrooooom….

Hey friends, how was everyones weekend? Mine was good! I have a funny facebook story. So this weekend I went with my BF to a car race in Connecticut. In the morning, I posted my facebook status as “Its race day!” I got about 3 comments within 30 seconds wishing me “good luck!” It took me a few minutes to realize that I think people thought I must have been competing myself in a race of some sort. Haha, it was quite funny, and also it felt great to know that when I say “race day” people equate this with me physically competing! Anyways, I, in no way competed myself, but rather I was a spectator at at car race! Anyways, more on that in a second. Back to Friday.


This was my first try at the PLAIN Siggi’s! I really enjoyed it. Siggi’s is such a thick, full fat ‘tasting’ yogurt, that this did not dissapoint. I enjoyed it plain, and half way through I sprinkled on some cinnamon
For lunch, I made a delicious WF salad on my way home. This was packed full with baby spinach, peppers, chickpeas, eddamame, purple cabbage, egg whites (about 2) balsamic roasted tofu (so good!) cucumbers and mushrooms. I topped it with balsamic vinegar.
Knowing we were packing a cooler full of food all day Saturday, I got making some homemade protein bars (which I forgot on Saturday!!!) I was so sad. But they were delicious. I started melting 1/2 C all natural PB and 1/2 C honey over medium heat.
Until it looked like this
I added 1.5 scoops of MGN Ice cream sandwich flavor protein powder (can use any flavor) and 1/3 C raisins (can use any dried fruit)
I pressed the whole thing in a tupperware that was lined with seran wrap (sprayed before hand) and flattened it out.
Fridge for about an hour or until hard and done! The simplest protein bars you will ever make and DELICIOUS!
Later in the day, I snacked on a protein shake. 1 scoop protein powder, 1/4 C frozen raspberries and 1/2 C almond milk. It was So deliciousssss
I love when it gets this frothy!
Dinner was take out. We had to be up early on Saturday so we made it easy and ordered some take out from a local restaurant. I got the turkey tips with steamed broc and quinoa (!) I was so exstatic to see quinoa on the menu as a side dish option!!
I also made a quick salad of baby spinach,cabbage, mushrooms, balsamic vinegar and minced garlic
Saturday, we woke up too early for Saturday and got a grande hot coffee ( I added 1 truvia and skim) I also made oatmeal and brought it on the road (no pic, sorry!) and 4 egg whites on the side
And the 2:45 car ride begins
and we arrived. I happen to have BF who loves anything with a motor. Car, motorcycle, truck, you name it, if it has a motor, most likely he knows exactly how it works, and everything about it. This race was very important to him and I was psyched to get to experience it with him (for my first time!)

and we set up shop next to one of the MANY big crowds. The track is 1.7 miles one time around, and we probably walked around the whole thing at least 3 times! if only I was wearing a pedometor
when we got settled I munched on an apple and an unpictured greek yogurt
There were BEAUTIFUL cars here. When I say people bring their cars to show them off, that is an understatement. This was a whole lot JUST for Porsche’s and there was another one just for Corvettes. Old, new, you name it, they were there. There were some amazing cars.
Chillin’ with dirty feet. When i say it was hot. that is an understatement as well. I have never spent so long outside in the HOT HUMID weather with no covering. It was almost unbearable at a point, which is when I got a gatorade because I was feeling light headed. Luckily, we had chairs that had optional covers to them, so we could be directly out of the sun, but it was so extremely humid, and thick, it was just brutal. There was not one dry body in the crowd
I packed a healthy salad for lunch with baby spinach, shrooms, cucumber and red pepper. I used salsa as the ‘dressing’
I also made a wrap with low salt turkey breast, baby spinach and yellow mustard (Josephs wrap)
Yeah, I enjoyed it too…On a hot day, this tasted so good!

I got so excited when I saw the Muscle Milk tent, I figured there would be free samples. Jason laughed at me. Apparently this was not a ‘free sample’ type of place. Muscle Milk is a sponsor of one of the cars, so there was a just a whole booth set up. Sadly, no samples
Well, At least I got a tan, right?
We went to a local restaurant for dinner, where I got one of my favorite salads ever! It is marinated Feta and Avocado. It has romaine, feta, pistachios, pinto beans, grilled chicken and avocado! I got oil and vinegar on the side. It doesn’t need hardly any dressing though! I also got a side of steamed broc and a HUGE glass of water
There are no words. It was amazing
Sunday, I started the day with some TURBO FIYAH. I loved it! I did the 30 min Fire workout and a 15 min HIIT workout followed by the 20 min core DVD. It was awesome! I refueled with oatmeal!

We took a ride on the bike to one of our favorite restaurants for lunch, Helens! I started with an iced coffee
I got my favorite salad ever! The mexican fajita salad: Black beans, shredded cheese, tomatoes, baby romaine, avocado, black beans, grilled chicken, cucumbers and red onion. Again, no dressing needed!
This morning–More TURBO FIYAH and coconut water (I just used the gatorade bottle to hold it) coconut water is growing on me! I did a 45 min class, then half of a p90x upper body workout, so I wanted to sip this throughout to stay hydrated (I also had 1 small banana before the whole workout)
I’m so bummed by HR monitor strap broke! I had to use tape to seal it together! I still have it, but it needs some major TLC. Oh well….

  • Have you ever been to a spectator event that wasn’t something that you would typically attend? For me, this car race is like NOTHING I have ever experienced, but it was fun!!
  • Is there a new food/drink that you were never fond of that you recently have enjoyed? For me, its coconut water!
  • Whats the easiest form of motivation you can think of for working out these days? I think about how good I feel afterwards and how much I love to sweat!
