Taste of Boston!

Heyyy. I had the best time tonight, but I will get to that in a few minutes. I also made the best dinner last night which I will share with you RIGHT NOW. First up were some delicious kale chips! I seriously get cravings for these at least once a week, and when I crave them, I just gotta have them. Kale was also on sale at Whole Foods $1.99 a bunch!
Right out of the oven!
Simple salad of baby spinach, red pepper and mushrooms
Kale chips and some roasted brussels sprouts that my mom made
So delicious and buttery tasting!
The star of dinner were fresh sea scallops. They were cooked on the stove top with:
  • 4 cloves of garlic
  • 1/4 C white wine
  • Fresh parsely (about 1/4 C chopped)
  • 2 T dijon mustard
My mom made a sauce with the above ingredients and cooked half in the scallops, then poured half on them once they were plated

Action shot
SO DELICIOUS! I love fresh scallops!!!

My workout today was cardio in the AM and chest & back in the PM. My cardio was a bit high intensity but not all out because I did legs yesterday and my hamstrings were so sore! (in a good way!) First I hit the treadmill for an incline walking/running routine. I don’t remember exactly what I did, but my girl, JULIE has an awesome treadmill workout on her blog and it was very similar (but mine was 22 minutes) After the treadmill for 22 minutes, I made my way to the elliptical for 18 minutes.

After some stretching and coffee, it was breakfast time. I used a drizzle of this!
On some pumpkin oats! (1/4 C oats, 1/4 C canned pumpkin, water, blueberries, eggwhites)
Home for lunch!!! Left over scallops, 4 oz sweet potato and loads of veggies!
After my chest & back workout (which ROCKED) I came home and showered etc to get ready for a little night out! My best friend who works in NYC works for a company called Seamless Web. SeamlessWeb is an online food ordering service that links individuals  and companies with the best local restaurants and caterers. They are based out of NYC, but they still do service with companies in major cities like San Francisco, Philidelphia, Chicago and Boston!  They had a special event in Boston in which some of the finest restaurant catering companies were featured! It was a chance to SeamlessWeb to show their amazing buisness as well as some local catering companies show us their amazing food! The event was held at the Royale in downtown Boston
Tomato and mozzerella Bruschetta on crostini’s
Ahi fish tacos from Haru (<---- I loved this idea!!)
Fresh spring rolls from Rebecca’s Catering
I grabbed a grilled chicken skewer. I loved how it was served in this little plastic holder!!
I also snagged one of these!! Grilled chicken which was wrapped around asparagus. I loved that you could eat the WHOLE THING!
Ahi tuna nachos
Beef in hallowed out cucumbers
This company was also showing us their corporate catering “take home” meals which were prepacked full meals! I loved that they were all very healthy and colorful
My grilled chicken wrapped over asparagus
Another vegetable skewer (tomato, mushroom, red onion and red pepper)
Take 1
Take 2!! (thats me on the far left) My friend in the middle works for SeamlessWeb and my friend on the right works in Boston locally! We all went to HS, middle and elementary school together.
This was such a nice evening with friends, family and food! I apologize because I left my camera elsewhere this week, and have iphone pics to resort to. I have to say the new iphone does take pretty good pictures!! I hope you all had a great day!!
  • Have you ever been to any local ‘foodie’ events? Did you get free samples or free swag? I have been here and also last year to the Boston vegetarian Food Fest! I love foodie events!! (more when I can eat a wider variety of foods, but still fun!)
  • Are you still close to your friends from High School or even before that? I am!! I am still extremely close with many of my friends from High School and elementary & middle school!
  • What have you been doing for that extra burst of energy during the day or in the morning to get you moving? This morning I was SO pooped!! Coffee didn’t help and even cardio didn’t help (usually both do!) I know its because my body needs more sleep than it has gotten in the past two days!
